Hi, my name is Sharon Dotyeth,i'm a forth generation Miachle employee and my great great grantfather began working company before late 1800s.i'd like to tell you about how we make tabasco sauce here in yalland.In feb.,we palnt the seeds in green house.they're growing to they are ready to be planted in the fields in near the April.This is when there are no more chances to frost.the pepper plants grow and material untill the
August,when the deep red pepper are ready to be picked. The color of peppers' changes from green ,to yellow ,to orange,and finally deep red when they are the ripest and juiciest.the red peppers are hand picked on the daily bases by workers who used are the red stick to gage exactlly what color the right peppers need to be.The same day the peppers are picked, they are ganged into the mash.we're small little to slove the mixture and placed the mashes to the white old barrel where it is aged in our ware house for a period over 3 years .To prepare the mashes for aging ,the wide old barrel are filled the mash ,al the wide rough grasp papers on the top of the mash in the barrel every things goes on and finally and XX is put on the wooden cover.to sealing and to keep the inpurities out.The mash is expected by member of family , he approved mash to bring to our mash processing area where is mixed with 100 gallon stilled vineger puting large with mixing vanes and strated throughout indolmiddlely for apporximately 30 days.At the end of period,the mash mixture is run though the three differet size squeezes to extract all pepper copes and seeds to create finished sauce and it is ready for bottling.We filled the bottles .They are capped with red capps.And their lables are five:front , back and neckle bank.The safety dealing supply,the bottles are put into the cottons with folded promtional inserved padics and they packed to the logged boxes to ship to our custumers. We manufacture approximately 730 boxes per day. Our products are shipped to over 160 couturies and territories and labled in 20 different languages dialects.
