目前,在大多数酒店中,餐饮成为其重要的组成部分。餐饮收入约占酒店收入的35%。对酒店而言,餐饮是最具竞争力的部门之一,也是酒店良好经济效益的主要来源。随着我国改革开放的进一步深入,餐饮经营的一些问题和矛盾也逐渐暴露,针对酒店餐饮业受社会市场冲击的现状,酒店餐饮业应正视本身具有的优势、存在的问题,保持清醒的头脑、审时度势、开拓创新、谋求发展,在不断增大的餐饮市场占领一席之地。本文针对酒店餐饮经营的现状及其存在的问题进行细致的分析后提出了相应的从产权制度和经营机制方面入手,解决酒店餐饮发展的根本问题、增加酒店餐饮环境的文化内涵、不断开发新产品,扩大餐饮销售力度、打造精品服务、注重酒店餐饮经营的社会效益,保证竞争能力的持久性等解决对策,以期酒店餐饮尽快走出困境,实现新的腾飞,迈向酒店餐饮业发展的成功之路。
